We’ve all seen chef Morimoto before, probably on TV or online from Iron Chef. This guys is famous, and some can consider him a legend; not in the traditional sense, but in a sense that inspires you. I have never seen him or eaten at his restaurant, but I will someday.
I really have great respect for him as a chef. He is a restaurateur , which basically means his passion is opening new and different restaurants. Not a lot of sushi chefs do that. Most stay traditional and conservative, not exceeding one or two restaurants with 12-person seating each. The fact that he is willing to experiment, take chances, and entrusts his businesses to the hands of the qualified individuals that will prepare and cook his visions means he is open minded.
Anyways, enjoy. This was a good watch.
